Lemon Icebox Pie

1/2 cup lemon juice
1-2 tablespoons lemon zest
14 ounce can sweetened condensed milk
8 ounces cream cheese
vanilla wafer pie crust
blueberries

Squeeze and zest 3 lemons, set aside.

Measure out 1/2 cup of lemon juice and add 1-2 tablespoons of lemon zest to it.

Open a 14 ounce can of sweetened condensed milk and add it to the mixing bowl.

Add 8 ounces of softened cream cheese to the bowl.

Use a stand mixer or hand mixer with whisk beaters to mix the ingredients until creamy, scraping the bowl a couple of times to ensure everything is well combined.

Pour the mixture into the vanilla wafer pie crust.

To set the pie, place it in the freezer for about 30 minutes or in the refrigerator for at least 3-4 hours or overnight.

Once set, the pie will be thick enough to slice.

Decorate the pie with stabilized whipped cream and fresh berries right before serving to prevent the berries from bleeding.
