Lemon Icebox Pie

1 1/2 cups graham cracker crumbs
1/2 cup granulated sugar
1/2 cup unsalted butter, melted
1 can (14 oz) sweetened condensed milk
1/2 cup fresh lemon juice
1 tbsp lemon zest
3 large egg yolks
1/4 tsp salt
1 cup heavy whipping cream
2 tbsp powdered sugar
1 tsp vanilla extract

Preheat the oven to 350°F (175°C).

In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

Press the mixture into the bottom and up the sides of a 9-inch pie pan to form the crust.

Bake the crust in the preheated oven for 8-10 minutes or until lightly golden. Remove from the oven and let cool.

In a large bowl, whisk together the sweetened condensed milk, lemon juice, lemon zest, egg yolks, and salt until smooth.
