Rinse and peel 2 sweet potatoes, then soak them in water to prevent discoloration.

Grate the sweet potatoes using the smaller side of the grater until you have about 3 to 4 cups of grated sweet potato; set aside.

Sift the flour, cornmeal, salt, cinnamon, nutmeg, mixed spice, and baking powder into a large bowl.

Add the brown sugar to the sifted mixture and mix until well combined.

Pour in the coconut milk and melted butter, then mix until combined.
