Coat the banana pieces in the batter thoroughly.
Heat oil in a thick-based cast iron wok until it is hot enough, indicated by fizzing when a wooden chopstick is placed in the oil.
Carefully lay each battered banana piece into the hot oil, ensuring not to overcrowd the wok.
Fry the fritters until golden brown, then remove them to drain on paper towels.
For a crispier texture, increase the heat and fry the fritters a second time until they are golden brown and crispy.
