Portuguese Custard Tarts

2 eggs
1 egg yolk
1/2 cup granulated sugar
1 cup milk
1/2 cup cream
1 tsp vanilla extract

In a saucepan, mix 2 eggs, 1 egg yolk, and 1/2 cup granulated sugar.

Add 1 cup milk and 1/2 cup cream to the mixture.

Turn the heat to medium and cook for about 7 minutes, stirring constantly to prevent sticking.

Once cooked, remove from heat and add 1 tsp vanilla extract.

Cover the surface of the custard with plastic wrap to prevent skin from forming.

Place the custard in the freezer to cool it down quickly.

Take the President's Choice butter puff pastry out of the freezer and roll it out.

Sprinkle cinnamon directly onto the pastry before cutting.

Cut the pastry into 12 equal pieces.

Press each piece into a mold to form the crust.

Spoon the custard into each pastry shell, filling it almost to the top.

Preheat the oven to 500°F and place the tarts in to broil.

Keep a close eye on the tarts while broiling to ensure they brown but do not burn.
