Temperar 1 kg de vitela de Lafões cortada em pedaços muito grandes com 2 folhas de louro, 3 dentes de alho picados, sal, pimenta, um fio de azeite, um fio de vinagre e 1 colher de chá de coloral.
Misturar tudo muito bem e deixar marinar de um dia para o outro.
Fazer o clássico refogado com um fio de azeite e 1 cebola grande picada.
Assim que a cebola começar a ficar translúcida, adicionar a carne com todos os sucos da marinada.
Regar com 200 ml de bom vinho branco e 500 ml de caldo de carne.
Temperar com uma pitada de sal, tapar e deixar cozinhar em lume muito brando durante cerca de 2 horas.
Retirar a carne do tacho e triturar tudo que sobrou com uma varinha mágica.
Deixar reduzir um pouco para obter o molho perfeito.
Para acompanhar, saltear 500 g de grelos com um fio de azeite e 2 dentes de alho picados.
Servir num prato com os grelos, algumas batatas assadas e um pedaço da vitela, regando com o molho da carne.
