Cut the ends off the brussels sprouts and cut them in half.

Chop one large white onion.

Dice five strips of bacon.

Preheat the oven to 425°F (220°C).

In a bowl, add the brussels sprouts, salt (about three pinches), black pepper, half of the chopped thyme, maple syrup (2 tablespoons), and olive oil (2 tablespoons). Toss to coat the brussels sprouts evenly.

Transfer the brussels sprouts to a roasting pan and place in the preheated oven for about 15 minutes.

In a skillet, cook the diced bacon over medium heat until crispy, then remove with a slotted spoon and place on a paper towel to drain.

Remove half of the bacon fat from the skillet and add 2 tablespoons of unsalted butter. Once melted, add the chopped onions and cook until translucent without browning.

After 15 minutes, remove the brussels sprouts from the oven. Pour the cooked onions and remaining bacon fat over the brussels sprouts and mix to coat.

Add the remaining chopped thyme and return the brussels sprouts to the oven for an additional 5 minutes.

After 5 minutes, remove the brussels sprouts from the oven, place half on a platter, and top with half of the reserved bacon. Add the rest of the brussels sprouts and top with the remaining bacon.
