Hollandaise sauce, a classic French sauce, is often associated with British cuisine through its use in dishes like Eggs Benedict. Traditionally made with just egg yolks and butter, it embodies the elegance of French culinary techniques. Today, it is celebrated worldwide, often enjoyed with vegetables, fish, and breakfast dishes, showcasing its versatility and rich flavor.

Ingredients

  • egg yolks
  • lemon juice
  • water
  • butter
  • salt
  • white pepper
  • cayenne pepper
  • fresh herbs

Instructions

  1. 1Whisk egg yolks, lemon juice, and water in a heatproof bowl until combined.
  2. 2Place the bowl over a pot of simmering water, ensuring the bowl doesn't touch the water.
  3. 3Whisk continuously until the mixture thickens and doubles in volume, about 3-5 minutes.
  4. 4Gradually add melted butter while whisking until fully incorporated and the sauce is smooth.
  5. 5Season with salt, white pepper, and cayenne pepper to taste.
  6. 6If the sauce is too thick, whisk in a few drops of warm water to reach desired consistency.
  7. 7Remove from heat and stir in finely chopped fresh herbs if desired.
  8. 8Serve immediately or keep warm over low heat, stirring occasionally.

A twist on the classic Eggs Benedict, incorporating Portuguese flavors with chorizo.

Ingredients

  • 4 large eggs
  • 2 English muffins, split
  • 4 slices of chorizo
  • 1/2 cup hollandaise sauce
  • 1 tbsp white vinegar
  • 1 tbsp olive oil
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. 1Fill a large pot with water and add the white vinegar. Bring to a gentle simmer over medium heat.
  2. 2Crack each egg into a small bowl, then gently slide them into the simmering water one at a time. Poach the eggs for about 3-4 minutes until the whites are set but the yolks are still runny.
  3. 3While the eggs are poaching, heat the olive oil in a skillet over medium heat. Add the chorizo slices and cook until they are browned and crispy, about 2-3 minutes per side. Remove from heat and set aside.
  4. 4Toast the English muffins until golden brown.
  5. 5To assemble, place a toasted half of an English muffin on a plate. Top with a slice of chorizo, then carefully place a poached egg on top.
  6. 6Drizzle with hollandaise sauce and season with salt and black pepper to taste.
  7. 7Garnish with fresh parsley before serving.
