Turn the stove on to medium heat and pour in the oil.

Add the diced onion and minced garlic and sauté until fragrant.

Add the smoked turkey to the pot and stir it around for a bit.

Pour in the beef broth and then add the collard greens.

Drizzle the apple cider vinegar over the greens and sprinkle with brown sugar, salt, and pepper.

Once the greens start to cook, add in the chopped jalapeno pepper and bay leaf.

Cover the pot and let the greens cook on medium-low for about an hour and a half, stirring occasionally.
