Turn on the Instant Pot and select the sauté mode.

Add a little olive oil to the pot.

Add diced smoked chicken thighs and cook until they start to get crispy and release their aroma.

Pour in 1 cup of water and scrape the bottom of the pot to get the crispy bits.

Add 1/2 tablespoon of fish sauce and stir it in.

Add pepper using a pepper grinder to taste.

Add a handful or more of the pepper and onion blend to the pot.

Add 16 oz of frozen collard greens to the pot and fold them in with the other ingredients.

Close the lid and seal the vent.

Turn off sauté mode and select the manual setting for 20 minutes.

After 20 minutes, turn off the Instant Pot and let it naturally release pressure for 10-15 minutes.

Open the pot and stir the collard greens.
