Transfer the toasted rice to a rice pan, making sure to include the bacon fat.

Turn on the heat under the rice pan and add 4 cups of chicken broth to the rice.

Bring the chicken broth and rice to a boil.

Add the chopped bacon, 0.25 small diced onion, 1 teaspoon pepper, 1.5 teaspoons salt, 0.25 teaspoon garlic, 1 cup peas, and 1 cup carrots to the boiling rice.

Stir the mixture and cover the pan.

Reduce the heat to a simmer and cook for 20 minutes without lifting the lid.

After 20 minutes, turn off the heat and let the rice sit for an additional 10 minutes without lifting the lid.

Remove the lid and fluff the rice to check for doneness.
