Prepare 360 g or 1 and 1/2 cups of strong espresso or strong coffee using either a machine or 4 and 1/2 tablespoons of instant espresso powder mixed with 360 g or 1 and 1/2 cups of hot water.

In a large bowl, add 4 egg yolks and 50 g or 1/4 cup of white granulated sugar, then whip together for about 5 minutes until thick and pale.

Add 450 g or 2 cups of cold mascarpone cheese and 1 teaspoon of vanilla extract to the egg yolk mixture, mixing at medium speed for about 3 minutes until thickened.

Clean the mixing attachments thoroughly to avoid fat residue before whipping the egg whites.

In a medium-sized bowl, add 4 egg whites and whip for about 30 seconds on medium-high speed until frothy.

Gradually add in 100 g or 1/2 cup of white granulated sugar while continuing to whip until stiff peaks form, about 5 minutes.

Assemble the tiramisu in a 9 by 13-inch dish by quickly dipping both sides of each ladyfinger in the cooled coffee for no longer than 2 seconds, then laying them in the bottom of the dish without gaps.

Spread half of the mascarpone cream mixture over the layer of ladyfingers, smoothing it out to the edges.

Repeat the process of dipping ladyfingers in coffee and layering them over the cream, then spread the remaining mascarpone cream on top, ensuring it's evenly covered.

Cover the dish tightly with cling wrap, ensuring it doesn't touch the cream, and refrigerate for at least 6 hours or ideally overnight.

After chilling, remove the cling wrap and dust a generous layer of unsweetened cocoa powder over the top using a fine mesh sieve, ensuring the cream is completely covered.
