mascarpone cheese

🥗Healthier: Greek yogurt

💰Cheaper: cream cheese

Greek yogurt is lower in fat and calories, while cream cheese is often more affordable.

ladyfingers

🥗Healthier: whole grain ladyfingers

💰Cheaper: sponge cake

Whole grain options provide more fiber, and sponge cake can be a budget-friendly substitute.

1

Roast 1/2 cup chickpea on the lowest flame for 35 to 40 minutes until golden brown.

2

Let the roasted chickpeas cool and grind them to a fine powder to make coffee powder.

3

Soak 1 cup chickpea overnight for 6 to 8 hours and pressure cook with 2 cups of water for 6 to 8 whistles.

4

Separate the water from the cooked chickpeas and let it cool to obtain Aqua Faba.

5

Take 1/2 cup of Aqua Faba and 1 teaspoon of cream of tartar and whisk gradually from low to high speed.

6

Add 1/2 cup powdered sugar and 2 tablespoons of cornstarch to the Aqua Faba while whisking.

7

Continue whisking until stiff peaks form (about 15 to 20 minutes).

8

Add 2 tablespoons of melted butter and 1 teaspoon of vanilla essence to the mixture and gently mix.

9

Add 1 teaspoon of baking powder and 1 cup of all-purpose flour, folding gently until combined.

10

Fill a piping bag (or Ziploc bag) with the batter and pipe onto a baking sheet, leaving 1 inch space between each.

11

Bake at 325°F for 15 to 20 minutes until done, then dry on a wire rack.

12

In a mixing bowl, combine 8 oz mascarpone cheese and 1 cup heavy whipping cream and whisk until stiff peaks form.

13

Add 1/2 cup powdered sugar to the mascarpone mixture and mix well.

14

In a separate pot, bring 1 cup of water to a boil and add 1 tablespoon of homemade coffee powder and 2 tablespoons of granulated sugar, stirring until dissolved.

15

Once the coffee mixture cools, dip the ladyfingers in the sweetened coffee and line them in a bread pan.

16

Spread a layer of the mascarpone mixture over the ladyfingers.

17

Repeat the layering with another layer of ladyfingers dipped in coffee and another layer of the mascarpone mixture.

18

Refrigerate the assembled tiramisu.

19

Before serving, top with carrot powder.
