Preheat oven to 375°F (190°C).
Peel, core, and slice apples into thin pieces.
Mix apples with sugar, cinnamon, lemon juice, and raisins in a bowl.
Melt butter in a skillet over medium heat.
Add bread crumbs to the skillet and toast until golden, about 3-4 minutes.
Roll out puff pastry on a floured surface until thin.
Spread the toasted bread crumbs evenly over the pastry.
Arrange the apple mixture along one edge of the pastry.
Sprinkle chopped walnuts over the apple mixture.
Fold the sides of the pastry over the filling, then roll tightly to form a log.
Place the strudel seam-side down on a baking sheet lined with parchment paper.
Brush the top with beaten egg for a golden finish.
Bake in the preheated oven for 25-30 minutes until golden brown.
Allow to cool slightly before slicing and serving.
