Rinse lentils under cold water until the water runs clear.
In a pot, combine lentils and water; bring to a boil over high heat.
Reduce heat to low and simmer lentils until tender, about 20-25 minutes.
In a separate pan, heat cooking oil over medium heat until shimmering.
Add chopped onion, cooking until translucent, about 5 minutes.
Stir in minced garlic and grated ginger; sauté for 1-2 minutes until fragrant.
Add chopped tomato, cumin, turmeric, and coriander; cook until tomatoes break down, about 5 minutes.
Add cooked lentils to the pan with spices; stir to combine and season with salt.
Simmer for an additional 5-10 minutes to meld flavors, adding water if necessary for desired consistency.
Meanwhile, cook rice according to package instructions until fluffy.
Serve lentil curry over rice, garnished with chopped cilantro and a squeeze of lemon juice.
