Peel the boiled beets and quarter them for easier processing.
In a food processor, crush walnuts with coarse salt and garlic cloves.
Add coriander, fenugreek, and a pinch of cayenne to the walnut mixture.
Add a splash of water to help turn the walnut mixture into a paste.
Combine the beet quarters with the walnut paste in the food processor and mix well.
Add one tablespoon of vinegar to the beet and walnut mixture.
Chop cilantro and mix it into the beet and walnut spread.
Taste the mixture and adjust with more vinegar and salt as needed.
Cover the mixture with plastic wrap and refrigerate for a couple of hours or overnight before serving.
