Black Pepper Fishcake

Cultural Context

Black Pepper Fishcake is a beloved dish in Guyana, often enjoyed as a snack or appetizer. It reflects the country's rich culinary heritage, influenced by various cultures including Indigenous, African, and Indian. Traditionally, these fishcakes are seasoned with local spices and served with a tangy dipping sauce. In modern times, they have gained popularity beyond Guyana, often found at Caribbean restaurants and food festivals.

1

Heat oil in a frying pan.

2

Scoop about a bite-sized amount of fish paste and drop it into the hot oil.

3

Fry until the fish cakes are golden brown and odd-shaped due to air trapped inside.

4

Remove from oil and place in a strainer to drain excess oil.

5

Switch off the heat and remove the fish cakes from the pan.

6

Add 1 tablespoon of cooking oil to the pan and heat it up.

7

Add chopped garlic to the pan and stir-fry until fragrant and brown.

8

Remove the garlic from the pan and set aside, leaving some oil in the pan.

9

Switch on the heat again and add chopped onions and capsicum to the pan.

10

Pour in 1 tablespoon of light soy sauce and 1 cup of water into the vegetables.

11

Cook for about 2 minutes until the vegetables are crunchy, or longer if a softer texture is desired.

12

Cover the pan with a lid to cook for about 1 minute.

13

Add water to the flour to create a thickening agent for the gravy.

14

Once the vegetables are cooked, pour in the thickened flour mixture to thicken the gravy.

15

Switch off the heat and add the fried fish cakes back into the pan.

16

Stir in the reserved garlic and toss everything together.
