1

In a large saucepan, add Irish butter, honey, maple syrup, brown sugar, and cinnamon.

2

Melt the ingredients together over medium-low heat until smooth and combined.

3

Once melted and simmering, turn off the heat.

4

Add rolled oats to the saucepan and mix well until coated.

5

Add dried coconut, chopped almonds, dried cranberries, and salt to the mixture and stir until well combined.

6

Prepare a 12x9 baking tray lined with parchment paper.

7

Spread the mixture into the tray and press down firmly to compact it.

8

Bake in the oven at 350°F (180°C) for 25-30 minutes or until golden brown on top.

9

Remove from the oven and let cool for a few minutes in the tray.

10

Cut the cooled granola bars into approximately 1x4 pieces.

11

Melt bittersweet chocolate and dip each granola bar halfway into the chocolate.

12

Lay the dipped bars on a tray with the chocolate side facing up.

13

Chill in the fridge or freezer for 5-10 minutes to set the chocolate.

14

Drizzle reserved melted chocolate over the top of the bars for decoration.

15

Store the granola bars in an airtight container at room temperature for up to 2 weeks or freeze for longer storage.
