No-Bake Chocolate Peanut Butter Granola Bars

1 cup mixed nuts and dried fruit (toasted walnuts, toasted pecans, toasted almonds, dried cherries, mini chocolate chips)
1/3 cup canola oil
1/3 cup honey
1 tsp vanilla extract

Preheat the oven to 325°F.

Prepare a 9x9 inch square pan lined with parchment paper, using two strips of parchment paper crosswise for handles.

Grease the pan with a mixture of canola oil and butter.

In a large bowl, add 2.5 cups of regular rolled oats.

Add 1/4 cup of sweetened flaked coconut, loosening it with fingers to avoid clumps.

Add 2 tbsp of brown sugar.

Prepare about 1 cup of mixed crunchy ingredients (toasted walnuts, toasted pecans, toasted almonds, dried cherries, mini chocolate chips) and add to the dry ingredients.

Stir the dry ingredients to combine.

Add 1/3 cup of canola oil and 1/3 cup of honey, followed by 1 tsp of vanilla extract.

Mix all ingredients thoroughly until well combined, ensuring the honey is evenly distributed.

Transfer the mixture into the prepared pan and press down firmly to compact it, using gloves or a flat object if necessary.

Bake in the preheated oven for 30 minutes.

Remove from the oven and let cool in the pan completely before cutting.

Once cooled, lift the bars out using the parchment paper and cut into 6-7 bars.
