Traditionally, it symbolizes abundance and is a centerpiece for celebrations such as Easter and Christmas. In modern times, this dish has gained popularity worldwide, with variations in herbs and cooking methods reflecting local tastes.

Preheat the oven to 450°F.
Place a big sprig of rosemary in a large pan as a bed for the lamb.
Rub the leg of lamb with lemon juice, ensuring all parts are coated.
Generously season the lamb with salt.
Rub minced garlic all over the lamb and poke holes in the meat to stuff garlic cloves inside.
Stuff garlic cloves into the holes in the lamb.
Season the lamb with black pepper.
Coat the lamb generously with DD's Mediterranean roast lamb seasoning, rubbing it into the meat.
Insert more rosemary into the grooves of the lamb.
Drizzle olive oil generously over the top of the lamb.
Arrange lemon slices around the lamb for added flavor and presentation.
Cover the lamb tightly with foil to prevent drying out.
If available, place the lamb on a roasting rack.
Roast in the oven for 30 minutes at 450°F.
Reduce the oven temperature to 350-375°F and roast for another hour.
Remove the lamb from the oven and let it sit for 15-20 minutes before cutting to retain juices.
Carefully remove the foil and carve the lamb, being cautious of bones.
Serve the carved lamb on a plate, optionally with brown rice and tzatziki sauce.
