4 oz smoked fish
4 oz stock fish
1 cup ground okra
1/2 cup ground iusi (melon seeds)
2 tablespoons crayfish powder
1/2 cup palm oil
2 tablespoons jansa (freshly ground Scotch Bonnet pepper)
1 teaspoon black pepper
2 cups tanot leaves
1 tablespoon salt
2 seasoning cubes
6 cups water

Add cow skin and stock fish into a pot.

Pour in water until half full and add salt and seasoning cubes.

Add chopped onions and more water.

Cover the pot and allow to boil.

Once cow skin is ready, take some stock from the pot and mix it with ground iusi and ground okra to form a smooth paste.

Add the paste back into the pot in bits and allow to cook.

Add jansa (Scotch Bonnet pepper) and palm oil, cover, and allow to boil.

Add half of the crayfish powder and mix well.

Add water to lighten the soup and stir to combine.

Cover and allow to boil for at least 10 minutes.

Add soaked tanot leaves and mix well.

Add blended okra and remaining crayfish powder, and mix.

Add water to loosen the soup and mix again.

Add seasoning cubes and palm oil to adjust color and mix well.

Cook on low heat for 7 to 8 minutes until tanot leaves are ready.
