Lebanese Hummus with Pita Bread

Soaked Chickpeas – 100g
Baking Soda – ½ tbsp
Olive oil – 60 ml
Tahina – 2 tbsp
Garlic cloves – 4 to 5 pcs
Lime juice – ½ lime
Chopped green chillies – 2 to 3
Chopped parsley – 1 tbsp
Salt to taste
Flour – 250 g
Salt – 5 g
Sugar – 6 g
Yeast – 6 g
Olive oil – 20 ml
Butter – 6 g

Boil chickpeas with salt and baking powder till they are soft.

Cool and peel them as much as you can (this helps a lot in terms of smoothness).

Blend with salt, olive oil, garlic, tahina and lime juice till you achieve a smooth paste. Add a little water if required.

Add chopped chillies and parsley and mix up.

Combine yeast and sugar in 160 ml of warm water and leave aside till the mixture becomes foamy.

Add the salt, yeast mixture and olive oil to the flour and bring the dough together.

Stretch out the dough and incorporate the butter.

Knead the dough for about 5 minutes or till you receive a nice smooth dough.

Cover the dough with a muslin cloth and allow to prove (leave aside till it is double its size).

Portion the dough into small rounds (50g each).

Roll the portioned dough into 0.5 cm thick rounds.

Place them on an oven lined with baking paper.

Bake at 230 C for 4 – 5 mins or till the surface is lightly brown.
