Combine water and granulated sugar in a saucepan over medium heat.

Stir until sugar dissolves, then bring to a boil without stirring.

Cook until syrup reaches soft ball stage (about 240°F/115°C).

While syrup cooks, whip egg whites in a stand mixer until soft peaks form.

Slowly pour hot syrup into whipped egg whites while mixing on medium speed.

Continue to whip until the mixture cools to room temperature and forms stiff peaks.

Add softened unsalted butter, one piece at a time, mixing until smooth.

Incorporate vanilla extract and salt, mixing until fully combined.
