1

Start by taking 2 medium-sized onions and 2 bell peppers.

2

Puree 3 medium-sized tomatoes.

3

Add 4 tablespoons of oil to a kadhai (wok).

4

Add 1/2 teaspoon of cumin seeds to the oil and let them sizzle.

5

Add the chopped onions and garlic to the kadhai and mix well.

6

Cook the onions and garlic until they are soft.

7

Add 1/2 teaspoon of ginger-garlic paste and mix it in, cooking until fragrant.

8

Add the chopped bell peppers and cook them for a while, covered.

9

Once the bell peppers are softened, mix everything well.

10

Add all the spices: 1/2 teaspoon of red chili powder, coriander powder, turmeric, cumin powder, garam masala, and black pepper powder.

11

Mix the spices well and cook them for a moment.

12

Add the pureed tomatoes and mix everything together.

13

Cover the kadhai and cook for about 6 minutes.

14

After 6 minutes, check the mixture; the oil should be separating from the sides.

15

Mix everything again and add a little water if needed, then cover and cook again.

16

Once cooked, create small gaps in the mixture to crack the eggs into.

17

Carefully crack the eggs into the gaps, one by one.

18

Cover the kadhai and let the eggs cook.

19

Check the eggs to see if they are cooked to your liking; if not, let them cook a bit longer.

20

Once the eggs are partially cooked, sprinkle pizza oregano seasoning over them.

21

Sprinkle black pepper on top of the eggs.

22

Add mozzarella cheese over the eggs; you can use any cheese you prefer.

23

Add fresh coriander leaves on top of the cheese.

24

Cover the kadhai again and let it cook until the cheese melts.
