½ cup red lentils (masoor dal) or yellow split peas, rinsed
1 large tomato, chopped
4 cups chicken or vegetable broth
1 cup coconut milk (or heavy cream)
1½ cups cooked chicken (shredded, optional)
Juice of ½ lemon
Salt to taste
Fresh cilantro, chopped (for garnish)
