1 medium parsnip, diced
3 tablespoons mild curry powder
1 bay leaf
1 can (14 oz / 400 g) chickpeas, drained and rinsed
6 cups vegetable stock
1/2 cup basmati rice
1 medium Granny Smith apple, cored, peeled and cut into cubes
3.5 oz (100 g) coconut cream
A handful of fresh cilantro or parsley, roughly chopped
Salt and freshly ground black pepper to taste

Heat the olive oil in a large stock pot or Dutch oven and sauté the onion, carrot, celery and parsnip for 8-10 minutes over medium heat until softened.

Stir in the curry powder and bay leaf, then add the chickpeas, vegetable stock and basmati rice.

Bring to a boil, then lower the heat and simmer for 10 minutes, stirring from time to time to prevent the rice from sticking to the bottom of the pot.

Add the apple and simmer for 10 more minutes with a lid on.

Stir in the coconut cream and fresh cilantro or parsley.

Adjust the seasoning and serve hot, with some extra freshly chopped cilantro or parsley on top.
