1 large red bell pepper
3 - 4 cloves garlic (chopped)
1 tsp salt
750 g minced chicken
1 cup parsley (chopped)
1/2 tsp black pepper
1 tbsp paprika
1 tsp red chilli flakes
1 tbsp chaat masala OR mixed spices
1 tsp lemon peel
2 tbsp plain flour
2-3 tbsp butter
3 tbsp oil
1/4 tsp salt
1/2 tsp paprika
1 tbsp lemon juice
4 tbsp tomato paste
sliced red onion
sliced tomato
chopped parsley
1 tbsp sumac

Process the onion, red bell pepper, and garlic, then pass through a sieve to extract water.

Combine minced chicken, processed vegetables, parsley, salt, black pepper, paprika, red chilli flakes, chaat masala, lemon peel, plain flour, and butter in a bowl. Mix well and refrigerate for at least 2 hours.

Soak wooden sticks in hot water for at least an hour.

After 2 hours, shape the mixture into kebabs, making 16-18 kebabs.

Cover a baking tray with aluminum foil and place a wire grill rack on top. Arrange the kebabs on the rack.

Preheat the oven to 170C/325F/Gas mark 3 and bake the kebabs for 10 minutes.

Prepare the special seasoning by mixing the extracted water with oil, salt, paprika, lemon juice, and tomato paste.

After 10 minutes, apply the prepared seasoning over the kebabs and grill them under the upper heat for 5 minutes.

Turn the kebabs over, apply more seasoning, and grill for another 5 minutes, then return to the oven for an additional 5 minutes.

To prepare the salad, mix sliced red onion, sliced tomato, chopped parsley, lemon juice, and sumac.
