1/2 cup bulgur wheat
8 spring onions
1 large bunch flat leaf parsley
1/2 cup fresh mint
2 ripe tomatoes
juice of 1/2 lemon
salt
fresh ground pepper
sumac

Cover 1/2 cup of bulgur wheat in boiling water and leave for half an hour.

Drain excess water from the bulgur wheat and fluff with a fork.

Chop a large bunch of flat leaf parsley finely.

Add the chopped parsley to a large bowl.

Chop 8 spring onions finely and add to the bowl.

Chop 1/2 cup of fresh mint finely and add to the bowl.

Chop 2 ripe tomatoes, de-seed them, and add to the bowl.
