Pat the salmon filets dry with a paper towel and transfer them to a baking dish.

In a small bowl, add 1/4 cup white miso paste, 1/4 cup mirin, 3 tablespoons honey, 2 tablespoons tamari soy sauce, and 1 tablespoon sesame oil. Whisk until smooth.

Drizzle most of the marinade over the salmon filets, leaving about 2 tablespoons in the bowl. Brush the remaining marinade on top before serving.

Marinate the salmon in the fridge for 30 minutes to 1 hour.

Gently smash 6 Persian cucumbers to create cracks for the dressing to hold.

In a pot, add 1 cup rinsed jasmine rice, 1 1/2 cups water, 1 tablespoon grated ginger, 1 tablespoon extra virgin olive oil or butter, 1 minced garlic clove, and 1/4 teaspoon kosher salt. Stir together.
