Ethiopian Lentil Stew

2 cups lentils
4 cups vegetable stock
1 green bell pepper
2 onions
garlic
olive oil
cayenne pepper
onion powder

Chop 2 onions, a green bell pepper, and garlic. Use pre-chopped onions if available.

Put chopped onions in the freezer for 10 minutes to avoid crying while cutting.

Heat a Dutch oven on medium-high heat and add olive oil to coat the bottom.

Add chopped onions and garlic to the Dutch oven and sauté until fragrant.

Increase heat to high and add 4 cups of vegetable stock to the pot.

Rinse 2 cups of lentils and add them to the boiling vegetable stock.

Add spices: ginger, allspice, coriander, cayenne pepper (extra), onion powder (extra), salt, and pepper to the pot.

Stir the mixture well and reduce heat to simmer.

Cover and let simmer for 30 minutes.

Prepare toppings: chopped onions, green pepper, cooked quinoa, Greek yogurt, and hot sauce.
