Vegan Spicy Ethiopian Lentil Stew

Add a little vegetable stock to a large pot and heat it up.
Add chopped white onion, cayenne pepper, and berbere spice to the pot and sauté for about 4 minutes until softened.
Stir in chopped garlic and ginger and cook for another couple of minutes.
Add the rest of the vegetable stock, canned chopped tomatoes, cooked chickpeas, red lentils, and diced red potatoes to the pot and stir well.
Cover the pot and let it cook for about 30-35 minutes until the potatoes are soft.
Add spinach to the pot and cover for a few more minutes until wilted.
Plate the stew and serve.
