Wash the sea bass fillets in lemon juice and vinegar.
Blend thyme, green onions, rosemary, cilantro, basil, garlic, onions, ginger, and peppers with a little oil to create a green seasoning.
Cut the fish into bite-sized pieces.
Combine the dry seasonings (seafood seasoning, Old Bay seasoning, black pepper, complete seasoning) with the wet green seasoning and mix well.
Marinate the fish in the seasoning mixture for about 1-2 hours or fry immediately if desired.
Prepare the breading by mixing self-rising flour, panko bread crumbs, cornmeal, black pepper, complete seasoning, seafood seasoning, and Old Bay seasoning.
Season the plantains with all-purpose seasoning and black pepper, then set aside.
Preheat oil for frying and fry the plantains for about 5 minutes until they reach desired crispiness, then remove and set aside.
Generously coat the marinated fish in the breading mixture.
Fry the coated fish in the preheated oil until golden brown, about 8 minutes, without flipping if desired, then remove and set aside.
