Cold Turkey Breast
Cultural Context
Originating from Middle Eastern culinary traditions, cold turkey breast is often served as a refreshing dish during festive occasions and gatherings. It showcases the region's love for aromatic spices and herbs, transforming simple turkey into a flavorful centerpiece. Today, it is enjoyed globally, often accompanied by various salads and dips.
Prepare 1 kg turkey breast, preferably tied.
In a bowl, mix 3 cloves of minced garlic, 1.5 teaspoons salt, 0.5 teaspoons curry powder, 2 teaspoons paprika, 0.25 teaspoons turmeric, and 1 teaspoon canned tomato paste.
Add 5 tablespoons of oil to the mixture and stir well. Adjust oil if needed to achieve the desired consistency.
Make thin slits in the turkey breast with a knife.
Rub the prepared seasoning mixture all over the turkey breast, ensuring it is well coated on all sides.
Place the seasoned turkey breast in a refrigerator bag and refrigerate overnight.
After marinating, transfer the turkey to a heat-resistant bag and open the bag slightly from the top.
If a heat-resistant bag is not available, place the turkey on a grilling rack or in a baking tray.
Preheat the oven to 120-140 degrees Celsius.
Place the turkey on the middle rack of the oven, ensuring that if using a heat-resistant bag, it is not sticking to the turkey and has air inside.
Cook the turkey at low heat until done, then remove from the oven and let it cool completely in the refrigerator.
Once cooled, slice the turkey into thin pieces.
