Tofu Noodle Stir-Fry

8 ounces linguine
1 block extra firm tofu drained and pressed
2 tablespoons corn starch
2 tablespoons oil separated
1/4 cup low sodium soy sauce
1 tablespoon hoisin sauce
1 tablespoon sesame oil
1 tablespoon maple syrup
1 tablespoon gochujang
1 tablespoon rice vinegar
1 teaspoon sesame seeds
4 cloves garlic minced
1 teaspoon fresh ginger minced
2 bell peppers sliced thin
1 yellow onion sliced
1 jalapeรฑo sliced, optional
1 carrot shredded
green onion for serving
sesame seeds for serving
basil for serving

Cook the linguine according to package instructions and set aside.

Press and drain the tofu, then cut it into cubes.

Toss the tofu cubes in corn starch until coated.

Heat 1 tablespoon of oil in a pan over medium-high heat and add the tofu, cooking until crispy on all sides.

Remove the tofu from the pan and set aside.

In the same pan, add the remaining oil and sautรฉ the garlic, ginger, and sliced vegetables until tender.

In a bowl, mix together the soy sauce, hoisin sauce, sesame oil, maple syrup, gochujang, and rice vinegar to create the stir-fry sauce.

Add the cooked linguine and crispy tofu back to the pan with the sautรฉed vegetables and pour the stir-fry sauce over everything.

Toss to combine and heat through.

Serve topped with sesame seeds, green onions, and basil.
