In a separate bowl, whisk together milk, eggs, sugar, and vanilla extract until well combined.
Pour the egg mixture over the bread pieces and let it soak for 10 minutes.
Add raisins, cinnamon, nutmeg, and salt to the soaked bread and mix gently.
Transfer the mixture to the greased baking dish, spreading it evenly.
Sprinkle cheddar cheese on top of the mixture.
Bake in the preheated oven for 30-35 minutes, or until set and golden brown.
Let cool for a few minutes before serving.
