Boil 3-4 cups of filtered water in a medium-sized saucepan.

Add 2 tea bags to the boiling water and let it brew for 5-7 minutes.

Remove the tea bags and stir in 1/4 cup of organic cane sugar until dissolved.

Allow the tea to cool completely.

In a glass mason jar that holds about 4 cups, pour in the scoby and the 1/2 cup of starter liquid.

Pour the cooled sugary tea water into the jar with the scoby.

Cover the jar with a breathable cloth or paper towel and secure it with a rubber band or hair tie.

Store the jar in a cool and dry place for about a week to ferment.

After a week, check for a baby scoby on top of the liquid.

Strain the first brew using a plastic strainer into a glass bowl to remove any baby scoby strands.

Return the old scoby to its jar and distribute 1/2 cup of the brewed liquid to each new scoby if sharing.

For the second ferment, pour the remaining liquid from the first ferment into a glass jar and add 1 teaspoon of sugar.

Seal the jar to allow carbonation to accumulate and add any desired flavorings like fresh fruit or dehydrated spices.

Store the jar in a cool and dry place for 5-7 days.

Refrigerate the kombucha to cool it down before serving.
