1

Wash your hands before handling the scoby to avoid transferring bad bacteria.

2

Place a pot over high flame and add 4 cups of water.

3

Once the water comes to a boil, turn off the flame and add the tea bags and black tea leaves.

4

Steep the tea for around 8 to 10 minutes to infuse the flavors.

5

Remove the tea bags and stir in sugar until fully dissolved.

6

To cool the tea quickly, add cold water from the fridge after removing the tea bags.

7

Transfer the cooled tea into a clean glass jar, leaving some space at the top.

8

Add 1 and 1/2 cups of starter kombucha to the jar with the tea.

9

Gently place one scoby into the jar, ensuring it is fully immersed in the tea.

10

Cover the jar with a light cheesecloth or a cut-up carrier bag and secure it with a rubber band.

11

Let the kombucha ferment in a warm, dark place for 7 to 20 days, checking for signs of fermentation like bubbles.

12

After the initial fermentation, transfer the kombucha into bottles, filtering out any loose tea leaves.

13

For flavoring, add hibiscus powder to one bottle and fresh passion fruit pulp to another bottle.

14

Seal the bottles and let them ferment for an additional 4 to 7 days for carbonation.

15

Refrigerate the bottles to stop fermentation before serving.
