Ground chicken is leaner, while ground beef is often more affordable.

Black beans are higher in fiber, and pinto beans are usually less expensive.

Chop about 1/2 cup of onion.

Brown 2 pounds of ground turkey in a large pot until cooked through, draining off excess grease.

Add crushed tomatoes and tomato sauce to the pot.

Add drained and rinsed Pinto beans, kidney beans, and black beans to the pot.

Pour in dry red wine, then add cumin, chili powder, dried parsley flakes, oregano, minced garlic, black pepper, and crushed red pepper if desired.

Add a couple of bay leaves to the mixture.

Bring the chili to a boil, then reduce the heat and allow it to simmer.

If you have time, cover the pot and simmer for 2 hours, or transfer to a crock pot and cook on low for several hours.
