2 tbsp. tamarind paste
1/2 cup brown sugar
1/2 tsp. ground cumin
1/2 tsp. ground ginger
1/4 tsp. garam masala
1/8 tsp. cayenne pepper, or to taste
1/8 tsp. ground Himalayan sea salt

In a medium saucepan over medium heat, add water and bring it to a boil.

To this, add tamarind paste and stir until nicely blended. Add brown sugar, cumin, ginger, garam masala, cayenne pepper and sea salt; mix well. Bring to a simmer.

Reduce to medium-low and reduce gently until consistency turns slightly syrupy, about 15 minutes or so.

Remove from the heat and let it cool off.
