Tamarind Sauce

1 teaspoon Panch Phoran
4-5 whole red chilies
1/2 teaspoon turmeric
1/2 teaspoon Kashmiri red chili powder

Soak 150 grams of tamarind in warm water for 30 minutes until soft.

Take a large bowl and place a strainer over it, then add the soaked tamarind to the strainer.

Using a spoon, press the tamarind while adding a little water to extract the pulp into the bowl below.

Once the pulp is extracted, remove any remaining fiber from the strainer.

Heat mustard oil in a pan and add 1 teaspoon of Panch Phoran.

Add 4-5 whole red chilies to the hot oil and sauté them lightly.

Pour in the tamarind water into the pan and increase the heat.

Add 1/2 teaspoon of turmeric and 1/2 teaspoon of Kashmiri red chili powder to the tamarind water and mix well.

Bring the mixture to a boil and let it simmer for 5 minutes.

After 5 minutes, add 250 grams of jaggery to the boiling tamarind water.

Stir continuously until the jaggery dissolves completely.

Add 1/4 cup of sugar and continue to cook until the sauce thickens.

Once thickened, add in raisins, chopped cashews, and chirongi to the mixture.

Turn off the heat and let the sauce cool down before transferring it to a bowl.
