Ube Cheesecake (Recipe)

Preheat the oven.

In a bowl, combine crushed graham crackers, sugar, cinnamon powder, and melted butter to form the crust. Press the mixture into the bottom of a pan.

In another bowl, mix softened cream cheese, sugar, ube jam, whole egg, egg yolk, all-purpose cream, and ube flavouring to create the ube cheesecake batter.

Pour the ube cheesecake batter over the crust in the pan.

In a separate bowl, mix softened cream cheese, sugar, whole egg, all-purpose cream, and vanilla to create the vanilla cheesecake batter.

Pour the vanilla cheesecake batter over the ube cheesecake batter in the pan.

Bake in the oven until set.

Let the cheesecake cool, then refrigerate until firm before serving.
