Rough chop 1/2 onion and set aside in a bowl.

Peel and devein 1 lb large shrimp, leaving tails on if desired.

Add olive oil to shrimp and toss with R and Cajun seasoning and Grill Mates vegetable seasoning, rubbing the seasonings into the shrimp.

In a bowl, combine 2 cups balsamic rice with 4 cups water and season with Grill Mates vegetable seasoning, black pepper, garlic powder, and onion powder; mix well.

Reduce heat to medium-low and cook for 9-12 minutes, stirring continuously to prevent separation.
