Grate 50 grams of smoked vegan cheese and set aside.
In a food processor, add 250 grams of firm tofu and blend until smooth.
Add 4 tablespoons of olive oil and 1 tablespoon of almond milk to the tofu, blend until creamy.
Add 120 grams of almond flour, 2 tablespoons of ground flaxseed, 0.5 teaspoon of baking powder, 1 teaspoon of nutritional yeast, salt, and a pinch of cayenne pepper or mustard powder to the mixture.
Pulse the mixture to combine, preserving air for fluffiness.
Transfer the dough to a mixing bowl and fold in the grated cheese, reserving some for topping.
Shape the dough into scones using a cookie cutter or by hand, ensuring not to press too hard.
Brush the tops and sides of the scones with olive oil and sprinkle with reserved cheese and sea salt flakes.
Place the scones on a baking sheet lined with parchment paper and bake in a preheated oven at 180°C (356°F) for 40-45 minutes until golden brown.
Let the scones rest for 10-15 minutes before serving.
