5 shallots
5 cm galangal, sliced
1 tbsp toasted coriander
3 tbsp tamarind juice
3 tbsp Bango Sweet Soy Sauce
1 tsp salt
1 tsp stock powder
½ tsp pepper
2 tbsp water
5 shallots (for sambal)
6 red Thai chilies
1 red tomato
1 lime
100 ml Bango Sweet Soy Sauce (for sambal)

Pat the meat dry. Trim the silver skin, then slice thinly. Transfer to a bowl.

Blend the galangal, coriander, garlic, shallots, and tamarind juice until smooth.

Add the blended spices to the meat. Add salt, stock powder, pepper, and Bango Sweet Soy Sauce.

Add water and mix well. Marinate for 30-60 minutes.

Skewer the meat with the soaked satay skewer.

Heat the grill. Cook the Satay until lightly browned on both sides, then brush the margarine on and grill until they’re fully cooked.

For the Sambal, slice the tomato, Thai chili, shallots, and lime.
