Eggplant / Brinjal – ½ kg
Pea nuts – ½ cup
Cloves – 4
Cardamom pods – 2
Cinnamon – 1 inch
Coriander seeds – 1 Tbsp.
Sesame seeds – 2 Tbsp.
Cumin seeds – 1 tsp
Pepper corns – ½ tsp
Fenugreek seeds (Methi) - ¼ tsp
Dry red chilies – 6
Poppy seeds – 1 Tbsp.
Coconut
Oil – 1/3 cup
Mustard seeds – 1 tsp
Cumin seeds – 1 tsp
Green chilies – 4 to 5
Curry leaves – 1 spring
Salt to taste
Turmeric powder – ¼ tsp
Red chili powder – 1 Tbsp.
Tamarind extract – 1 Tbsp.
Water – 1 cup
Coriander leaves – for garnish.

To a pan, add peanuts and dry roast until 70% done.

Then add all the remaining spices (ingredients from spice mix) and roast until aromatic.

Blend the spices into a fine powder.

Then add salt, turmeric powder and red chili powder to the blended spices and mix well.

Slit the brinjals in the form of ‘X’ and drop them in salt water until ready to stuff.

Then stuff the brinjals with the spice mix.

Heat oil in pan.

Add mustard seeds, cumin seeds, green chilies and curry leaves and sauté for a minute.

Then add the stuffed brinjals and the remaining spice mix.

Cover and cook on low flame until brinjals are 70% done. Keep stirring gently in intervals.

Then add the tamarind extract, 1 cup water and mix well. Adjust the seasoning.

Cover and cook for about 10 minutes until brinjals are fully done and oil separates.

Garnish with coriander leaves.

Serve hot.
