Onion slices - 1 cup
Tomato - 1
Oil - 2 tbsp.
Ginger garlic paste - 1 tbsp.
Methi leaves - few
Curry leaves - few
Red chili powder - 1 tsp
Salt - 1 tsp
Coriander powder - 1/2 tsp
Turmeric - 1/3 tsp
Coconut powder - 1 tbsp.
Garam masala - 1/2 tsp
Cilantro

Making masala stuffing preparation

Mix all these ingredients: Onion slices, Oil, Ginger garlic paste, Red chili powder, Salt, Coriander powder, Turmeric, Coconut powder, Garam masala.

Add them to mixi jar and make it into a paste.

Cut the brinjal and fill the masala paste.

In hot pan, add 2 tbsp oil, add some cumin, few chopped methi leaves, and curry leaves.

Saute them and add onion slices.

Add stuffed brinjal and saute them for 6-7 minutes.

Add remaining masala paste and add tomato slices.

Cook on medium heat for 3 more minutes and add water to get desired consistency.

Mix well and cover the lid.

Cook for 5 more minutes.
