Place sausages in a pot with about 1 tablespoon of water and cover to steam cook.
Rotate sausages while cooking to ensure they brown on each side.
Fill the pot with diced potatoes, covering them with water.
Add about 2 pinches of salt to the water and cover the pot.
Cook potatoes on high heat for 5 minutes and sausages on medium-high for 10 minutes.
Check if potatoes are soft with a fork, then drain and set aside.
Check sausages for a golden brown color, then remove and set aside to rest.
Add 1 tablespoon of olive oil to a skillet, then add onions and garlic.
Add celery (without leaves) and shiitake mushrooms (optional) and sauté.
Add a pinch of salt and the cooked potatoes to the skillet to warm and crisp them up.
Add bell peppers and celery leaves, then sauté until everything is crispy and soft.
Mix in remaining salt and pepper to the potato hash.
Chop the cooked sausages and add them to the potato hash, mixing well.
Add cherry tomatoes to the mixture for color and presentation.
Add shredded cheese to melt with the potato hash.
Make gaps in the hash for 4 eggs and crack an egg into each gap.
Cover the skillet and let the eggs cook for about 3 minutes.
Turn off the heat once the eggs are cooked to desired doneness.
Chop parsley for garnish and add it for presentation.
