Turkey sausage reduces fat while maintaining flavor.

Canola oil is less expensive and has a neutral flavor.
Start by browning Italian sausage or country sausage in a pan.
Once browned, remove the sausage from the pan and set aside.
Add a little more grease to the pan from the sausage.
Add potatoes to the pan, breaking them up and coating them in the grease.
Cook the potatoes on medium to medium-high heat for about 10-15 minutes, stirring occasionally.
Once the potatoes are about 3/4 of the way done, create space in the pan for onions and bell pepper.
Add onions and bell pepper to the pan and cook for about 5 minutes to let them heat and soften.
Add garlic, salt, pepper, creole seasoning, and paprika to the pan.
Cook for another 5 minutes to combine flavors.
Add the sausage back to the pan and stir everything together.
Let it cook for another minute or two to meld the flavors together before serving.
