Salisbury Steak

Cultural Context

Salisbury Steak originated in the United States in the late 19th century, named after Dr. James H. Salisbury, who advocated for a meat-heavy diet. This dish became a popular comfort food, especially during the Great Depression, as it was affordable and filling. Today, Salisbury Steak remains a staple in American cuisine, often served with mashed potatoes and gravy, and has inspired variations in many households.

1

In a large mixing bowl, add all of the Salisbury steak ingredients. Mix well, then divide the meat into 5 equal-sized patties.

2

Heat 1 tbsp of olive oil in a skillet and cook the patties until they are browned. Remove the patties from the skillet and set aside on a plate.

3

In the same skillet, add more olive oil, then add the onions and cook for 5 minutes, then add the mushrooms, garlic, and tomato paste. Cook for another 1 minute.

4

Add the butter. Once the butter is melted, sprinkle in the flour and cook, stirring constantly for 1-2 minutes.

5

Deglaze the mixture with red wine, scraping brown bits from the pan. Gradually add the beef broth, whisking as you go. Once most of the lumps are removed, then add the remaining gravy ingredients. Season the gravy with salt and pepper, tasting as you go.

6

Add the steaks and any juices from the plate back to the pan with the gravy and continue cooking for another 5-7 minutes.

7

Serve the Salisbury steaks and gravy immediately with mashed potatoes and your favorite green veggie. Garnish with chopped parsley.
