Mooli Ka Paratha

Traditionally, it is served with yogurt and pickles, embodying the comfort of home-cooked meals. Today, variations exist across India, with some adding spices or different fillings, making it a beloved staple in many households.

Oat flour adds fiber and nutrients, while all-purpose flour is more accessible.

Olive oil provides healthy fats, while vegetable oil is often less expensive.
Grate 2 cups of radish (about 3 large radishes).
Chop 2-3 radish leaves and add them to the grated radish.
Chop 4-5 green chilies and add to the mixture.
Add 1 tablespoon red chili powder, 1 tablespoon salt, 1/2 teaspoon garam masala powder, 1 tablespoon coriander powder, and 1 tablespoon chaat masala powder to the bowl.
Add 1/2 cup chopped coriander leaves and mix everything well.
Add 1 tablespoon salt to the mixture and let it sit for 15 minutes to draw out moisture from the radish.
After 15 minutes, strain the mixture using a clean cotton cloth to remove excess water, reserving the water for later use.
In a separate mixing bowl, add 2 cups of whole wheat flour, 1 tablespoon oil, and 1/2 teaspoon salt.
Add the reserved water from the radish to the flour mixture and knead into a soft dough.
Divide the dough into small balls and roll them into thin discs.
Grease a rolling surface with oil and place one disc on it, adding the radish filling on top.
Cover with another disc and seal the edges.
Roll the stuffed discs gently to flatten them.
Heat a skillet until hot and place the rolled paratha on it.
Cook until golden brown, flipping and applying oil on both sides as needed.
Serve hot with yogurt and chutney.
